Mango Tree Turmeric Stewed Egg

Following its ‘roots and fruits’ campaign by Mango Tree Worldwide, 15 of its head chefs from different branches journeyed down the south of Thailand and experienced the culinary culture from local communities.

Inspired by the sustainability teachings by the late King Rama IX, chefs were introduced to a variety of flavors, dishes and ingredients available. 
Upon returning, the chefs’ team were put to the test to create a lineup of tasting menu for a special dinner at Mango Tree on the River, Yodpimarn Pier.

The dinner started with an array of exciting appetizers. First up, Turmeric egg followed by the crispy Turmeric fried Sand Whiting fish and char-grilled chicken skewers Golek-style served on a banana leaf.

The mains comprised of the heavy-in-texture spicy ‘mud’ squid ink rice – the ‘black’ rice is served amidst portions of sour mango, betel leaves, lemongrass, long beans, shaved coconut, pomelo, dried shrimp, pineapple and shallots. While the texture (pleasantly) surprised me, the flavors and aroma of the rice and herbs together brought back a kind of nostalgia I couldn’t put my finger on.

Next, the crab leg and crab roe served with the famous Chaiya salted egg relish offered a very satisfying sensation of crab meat and curry in every bite.

It was followed by Aunty Kanya’s shrimp paste served with hot and sour soup. The fish chunk in the soup was precisely cooked and together with the soup offered a very delicious mouthfeel.

The desserts started with Chaiya salted egg ice cream; sweet, cooling and yet savory at the same time.

Next, brown sugar cheesecake which, evident from the name, was very, very, very sweet. I have a sweet tooth, but even that was too much for me. Though the preserved Nipa Palm fruit served chilled in ice which offered a lovely and satisfying close to the meal.
